Roasted Marinara Chicken

I am all about easy and healthy meals. This recipe came out of a little bit of improv and a little bit of a Good Housekeeping Cookbook recipe. It only takes about a half hour to prepare! Enjoy!



1-lb pound package of boneless chicken breast

5 cloves of garlic

1 white onion, chopped

1 teaspoon basil (fresh or dried)

1 teaspoon oregano

1-16 oz. can of plum tomatoes

1-8 oz. can of tomato sauce

Salt and pepper to taste



Pre-heat the oven to 375 degrees. Combine crushed garlic cloves and chopped onion with olive oil in a medium saucepan. Sauté the garlic and onion for about five minutes. Season the chicken breast as needed with salt and pepper. Brown the chicken in a medium saucepan. Brown the chicken in the same pan as the onions and garlic to allow the chicken to absorb the flavors.

Add the plum tomatoes, tomato sauce, basil, and oregano to the chicken-onion mixture and allow to simmer and thicken for approximately 10 minutes. Then put the entire saucepan into the oven for 20-25 minutes.

Let cool and enjoy! I like to have the chicken and sauce on its own, but it's also good with some pasta. Your choice!
